Challenge: Can You Eat Breakfast Every Day This Week?

Up for the challenge?? One of the easiest ways teat healthier is to have breakfast every day. Regular breakfast eaters tend to be leaner and breakfast-eating dieters are more successful at losing weight. What’s more, studies have found that they also get more fiber, calcium, vitamins A and C, riboflavin, zinc and iron—and less fat and dietary cholesterol. A healthy breakfast includes a mix of whole grains, dairy, protein and fruits and vegetables.

Ok, I know, I know...you're in a hurry in the morning. TRUST me...you are dealing with the girl who wakes up 3 minutes before I have to leave for work lol If I can figure out how to make it work, then you can too! 


Ideas:
Shakeology: I know I always gush about Shakeology, but this is a perfect example of why....packet plus water = healthiest meal of the day. Easy, delicious, no excuses.

Egg Muffins: Make these at the beginning of the week- then grab and go!

Oatmeal: Add water & heat! I pre-portion oatmeal in little tupperwear containers to just grab on the go. Love my Oatmeal!

Eggs: It takes like 2 minutes to cook eggs. Add salsa!  But again, if you're like me...time is of the essence! Cook some hard-boiled eggs ahead of time :) 


    EatingWell Deviled Eggs Recipe
  • 12 large hard-boiled eggs , (see Tip), peeled
  • 1/3 cup nonfat cottage cheese
  • 1/4 cup low-fat mayonnaise
  • 3 tablespoons minced fresh chives , or scallion greens
  • 1 tablespoon sweet pickle relish
  • 2 teaspoons yellow mustard
  • 1/8 teaspoon salt
  • Paprika , for garnish
    1. Halve eggs lengthwise with a sharp knife. Gently remove the yolks. Place 16 yolk halves in a food processor (discard the remaining 8 yolk halves). Add cottage cheese, mayonnaise, chives (or scallion greens), relish, mustard and salt; process until smooth.
    2. Spoon about 2 teaspoons yolk mixture into each egg white half. Sprinkle with paprika, if desired.
  • Red Pepper & Goat Cheese Frittata

      Red Pepper & Goat Cheese Frittata Recipe
    • 8 eggs
    • 2 tablespoons finely chopped fresh oregano
    • 1/2 teaspoon salt
    • 1/4 teaspoon freshly ground pepper
    • 2 tablespoons extra-virgin olive oil
    • 1 cup sliced red bell pepper
    • 1 bunch scallions, trimmed and sliced
    • 1/2 cup crumbled goat cheese
    1. Position rack in upper third of oven; preheat broiler.
    2. Whisk eggs, oregano, salt and pepper in a medium bowl. Heat oil in a large, ovenproof, nonstick skillet over medium heat. Add bell pepper and scallions and cook, stirring constantly, until the scallions are just wilted, 30 seconds to 1 minute.
    3. Pour the egg mixture over the vegetables and cook, lifting the edges of the frittata to allow the uncooked egg to flow underneath, until the bottom is light golden, 2 to 3 minutes. Dot the top of the frittata with cheese, transfer the pan to the oven and broil until puffy and lightly golden on top, 2 to 3 minutes. Let rest for about 3 minutes before serving. Serve hot or cold.
