PB2 French Toast

2 slices: Raisin bread
1: Egg
1/4 cup: Skim milk
1 Tbsp: PB2
2 Tbsp: Banana, mashed
1 tsp: Vanilla
A pinch: Salt
A pinch: Cinnamon



Beat egg and mix with milk, salt and vanilla. Dip raisin bread into egg mix and saturate. Cook toast on low heat in heavy bottomed pan. Mix PB2 with mashed bananas. When one side of the toast is cooked and flipped in the pan, spread one slice with PB2 and banana. When the other side is finished, put together like a sandwich, cut into quarter pieces, plate and serve with fresh fruit.
